Coeliac’s Disease

This week is Coeliac Awareness Week. How much do you know about Coeliac's Disease?

🍞Coeliac's is an autoimmune disease where the body attacks the fibres that line the gut of the small intestine (villi) when people with this eat gluten containing foods (barley, rye, wheat and some are sensitive to oats). This means that absorption of nutrients is more difficult and may lead to deficiencies like iron and affect it may affect growth in children, gut function in general and vitality.

🍞Some people have gluten sensitivity rather than Coeliac's Disease where they feel generally unwell and get bloated or digestive upsets when they eat gluten. These people may be ok eating gluten sourdough bread as the gluten has been broken down by the fermentation process.

🍞This is a lifetime health issue and people with this are unable to even have small amounts of gluten as it triggers adverse health outcomes.

I have Coeliac's Disease and I find gluten is usually easy to avoid. When eating out most cafes and restaurants are aware of this and will do their best to cater for me. Most now have gluten free options on the menu and in the cabinet. The keto movement is helpful too as most keto is gluten free.

What about the bread? I make a really yummy gluten free sourdough. It's really good. This is the recipe I use. I'm planning a visit to dear friends who have Coeliacs in the household and this will be on the cards to take for them.
